Description
The recipe won't take much time. It's important to choose young eggplants with thin skin and no seeds. We'll make the batter from eggs, water, and soy sauce. Eggplant tempura is delicious served with a sauce—for example, one made from mayonnaise, garlic, and herbs. Wash the eggplant, pat it dry, trim off the stems from both sides, then slice into thin rounds.
