    First of all, we need to prepare all the necessary ingredients, so we wash and dry the meat, then cut it into small cubes (2.5–3 cm wide), and slice the tomatoes into wedges.

    Next, peel the onion, carrot, and garlic, rinse all the vegetables under running water, chop them into small cubes, and slice the garlic into thin pieces.

    Pour a little olive oil into the multicooker bowl and add carrots, fennel, onion, and celery, then add thyme. Select the "Sauté" mode and set the time for 9 minutes, frying the vegetables while stirring occasionally. While the vegetable mixture is cooking, take a frying pan, heat oil in it, and sear the veal over high heat until golden brown. Transfer the meat to a plate. Add garlic and rosemary to the same pan and sauté for about a minute, then add tomatoes and cook for 5 minutes. Then add tomato paste, mix everything well, and turn off the heat.

    Transfer the veal and tomatoes with garlic to the pot with the other ingredients, add the olives, pour in the wine, and mix everything. Turn on the "Stewing" mode and cook the meat with vegetables for 30 minutes. After that time, open the lid, pour in the remaining wine, season with salt and pepper to taste, and continue cooking the veal in the same mode for another 1.5 hours.
