Description
German-style veal is marinated for about a week and then cooked for another three hours. But it's worth it! The recipe for German-style veal is very old, preserved to this day thanks to the incredible flavor of the meat. Serve the veal with your favorite sauce. I serve it with sour cream to enhance, not overpower, the meat's taste, highlighting its tenderness. Here is my step-by-step recipe for German-style veal.

First, prepare the broth. Chop the onion, carrot, parsley root, and celery stalk, place everything in a pot with water, bring to a boil, then add juniper berries, thyme sprigs, bay leaf, clove buds, and wine vinegar. Simmer everything together for 15 minutes.

Let the broth cool. Then place the piece of veal into a container and pour the broth, now serving as marinade, over it. Let the veal marinate in a tightly sealed container in the refrigerator for about a week.

After a week, remove the veal and dry it with a paper towel or kitchen towel.

Preheat the oven to 180 degrees. Meanwhile, sear the piece of veal on all sides in butter, 4 minutes per side.

Heat the marinade in a saucepan.

Place the veal in a baking dish, pour over the marinade, and put it in a preheated oven at 180 degrees. Bake the veal for 2.5 hours. After one hour, remove the dish, turn the veal over, and return it to the oven.
