
Fish cutlets
Description
A delicious appetizer for any gathering. Here is a modern take on an old Russian dish — fish telfie. It’s modern because in the past there was neither food wrap nor gelatin. Fish fillets were wrapped in linen cloth and the telfie was poached in a rich broth made from bones, fins, and fish skin. If you love dishes made with poached fish, this recipe will delight you. Look — the appetizer is ready. Serve immediately.

Cut the cod fillet into very small cubes.

Peel the onion and dice it into very small cubes as well.

Also finely chop the green onions and parsley.

Place all prepared ingredients in a bowl, add salt, pepper, and gelatin. Mix, then add the egg. Mix again until you have a smooth, uniform mixture.

Spread out plastic wrap and place either all of the mixture if you decided to make one large fish sausage, or divide the mixture into several portions.

And wrap tightly in several layers of plastic wrap, shaping it into a log.

And now tie the ends of the plastic wrap very tightly.

Wrap the remaining filling the same way.

Bring the water to a boil and lower the sausages into it. Cook for 20 minutes. Then remove, cool, and refrigerate for several hours.

Slice the chilled fish fillet and arrange on bread slices spread with sauce or simply horseradish.
