
Teiglah
Description
The recipe won't take much time. Preparing "teiglah" is quite simple, the most labor‑intensive part here is slicing the dough, but let your home cooks help you with that, and serve it cooled or slightly warm.

Prepare the ingredients.

In a mixing bowl, beat the eggs, pour in vegetable oil, add a pinch of salt, 3 tbsp sugar, and baking soda neutralized in vinegar.

Add the flour and knead the dough.

The dough should be soft, but don’t overdo the flour; knead until the dough no longer sticks to your hands.

Roll out thin strands about 0.5 cm in diameter. Cut into pieces about 0.5 cm.

Place the pieces on a baking sheet, bake for 10-15 minutes at 180 °C until lightly browned. This procedure will have to be repeated several times. While the first batch is baking, prepare the second one.

You get a little mound of “nuts”.

Place the honey and sugar in a spacious heavy-bottomed pot, and melt them over low heat.

Place the “nuts” in a pot and simmer for 15–20 minutes so that all the nuts soak up the syrup; as soon as they start sticking to the spatula, you can remove it from the heat.

While the "nuts" are cooking in sweet syrup, prepare the place where you will lay them out; it can be a board or any flat surface on which you sprinkle a mixture of sugar and poppy seeds.

Place the “nuts” on the prepared spot, press them firmly, the thickness of the treat is about 1.5 cm. Sprinkle the top with a mixture of sugar and poppy seeds, and let it cool.

Slice the cooled “teiglah” into diamond-shaped serving pieces. It’s a very tasty festive treat, and your hand just reaches out to pluck the next “nut”.
