Description

So here we go with meatballs again—a classic dish that we'll easily give a new twist. This simple barley meatball recipe is practically no different from the traditional version, with just one small change—we'll use barley instead of rice, and add pumpkin instead of carrots. These simple ingredients will significantly improve the flavor of a familiar dish, making it even more delicious. Barley will give the meatballs a special taste and texture, while pumpkin will make the minced meat slightly sweet and incredibly tender. And of course, we shouldn't forget the health benefits of these ingredients. I highly recommend you try these wonderful meatballs. Plus, they're very easy and quick to prepare. Below is a detailed recipe for barley meatballs to make your cooking easier.

Instructions

  1. 1

    Step 1

    Step 1

Since pearl barley takes quite a long time to cook, we need to soak it for about half an hour beforehand to make the process easier. Then drain the old water, add fresh water, and place it on the stove. Cook until fully done, which usually takes about an hour.

    Step 2

Finely chop the onion, or if you don't like onion pieces in your meatballs, you can grate it on a fine grater.

  3. 3

    Step 3

    Step 3

Grate a small piece of pumpkin on a medium grater. Instead of pumpkin, you can also use sweet potato.

Now mix the minced meat, cooked barley, pumpkin, onion, crushed garlic, and chicken egg in a deep bowl. Mix thoroughly until smooth.

Salt to taste, add ground pepper and dried basil, mix once more.

  6. 6

    Step 6

    Step 6

Form meatballs of your desired size from the prepared minced mixture (it's best to use wet hands for this). Grease a baking tray with oil, place the meatballs on it, and put the tray into a preheated oven at 180-200 degrees Celsius for half an hour.

Heat the canned sauce in a saucepan and pour it over the meatballs on the baking sheet 5–10 minutes before they are done. You can prepare the sauce yourself using tomatoes or tomato juice, adding spices to your taste. Serve the cooked meatballs with any side dish. Enjoy your meal!
