
Bean meatballs
Description
The recipe won't take much time. Along with the recipe for bean cutlets, you'll also get a bonus recipe for a delicious nut sauce. Bean cutlets turn out crispy on the outside and tender on the inside, while the nut sauce adds a unique flavor. Give it a try—I'm sure you'll love it. Serve hot.

First, boil the beans until soft (it's better to soak the beans in advance for several hours), then drain the broth (we will need it later). Pass the beans through a meat grinder. Meanwhile, heat sunflower oil in a frying pan. Sauté finely chopped onion in it until translucent. Then add tomatoes rubbed through a sieve (preferably without skin) to the pan. Season with salt and pepper, and sauté, stirring, until the mixture thickens.

Add the fried tomatoes to the bean mince. Mix well.

Then add egg yolk (preferably two), salt and pepper.

Roll the resulting mixture into balls the size of a walnut, coat them in egg white, then in breadcrumbs. Next, fry the meatballs in oil on all sides until a delicious crust forms.

While the meatballs are frying, let's prepare a delicious sauce. For this, in a deep bowl, pour the bean broth over ground walnuts (passed through a meat grinder). Be careful not to make the sauce too runny. Then add a small amount of vinegar, chopped herbs, salt, and pepper. Mix everything thoroughly.

Pour the sauce over the meatballs and simmer over low heat for about 5-10 minutes.
