
Lamb meatballs
Description
Start preparing lamb meatballs by making the mince. Grind the meat in a meat grinder, add egg and spices to the mince, knead well and shape into small balls. In a mixture of oils, sauté onions and garlic, add spices, and a few minutes later add puréed tomatoes. Simmer for 10 minutes after boiling. Then place the meatballs into the spicy tomato sauce and cook for another 10 minutes. Remove and discard the bay leaf. Next, add olives and gently crack in the eggs. After just 7-8 minutes, sprinkle the dish with fresh coriander and serve immediately.

Pass the lamb through a meat grinder, add egg, a pinch of cumin, sweet paprika, salt, pepper to the minced meat, and mix well. Shape the mixture into meatballs and place them in the refrigerator for now.

Finely chop the onion and garlic. Sauté them in a mixture of vegetable and butter until golden brown.

Prepare cumin, paprika, dried chili pepper, ground ginger, saffron, and bay leaf.

Add these spices to the pan with the onion and garlic and simmer for a couple of minutes.

Then pour in the sieved tomatoes, add sugar, salt, pepper, bring to a boil and simmer for 10 minutes over low heat. Then remove the bay leaf, add the meatballs and cook, covered, for 10 minutes after boiling.

Add the olives and gently crack 4 eggs into the skillet with the meatballs. Simmer, covered, for another 7-8 minutes. Try to keep the yolks from spreading. Sprinkle the finished dish with chopped cilantro.
