
Turkey meatballs with mushrooms
Description
You can buy marinara sauce at the store, but it's quite easy to make it yourself. All you need are ripe tomatoes, garlic, oregano, and good olive oil.

If you decided to prepare the sauce yourself, blend the tomatoes in their own juice together with the juice. Pour olive oil into a saucepan and press in the garlic. Gently heat the garlic in the oil, then pour in the tomato mixture. Season with salt and pepper to taste, add a little oregano, and simmer over low heat until the sauce thickens.

Chop the mushrooms coarsely in a food processor. Finely chop the onion as well. Sauté the mushrooms with the onion in a spoonful of oil until soft. Let cool.

Grind the turkey fillet into minced meat using a food processor.

Add mushrooms, sifted breadcrumbs, the white of one egg, and some grated cheese—pecorino or Parmesan would be ideal, but any hard cheese will do—to the turkey. Season the mixture with salt and pepper, add a bit of Italian herbs, and mix well.

With wet hands, roll the meatballs into the size of ping-pong balls.

Pour a little sauce into the bottom of the baking dish and place the meatballs on top.

Pour the sauce over the top and bake in the oven at 200 degrees for about 20-25 minutes. You can also simmer the meatballs in a saucepan over medium heat.

Serve the meatballs with pasta on the side, generously topped with tomato sauce and garnished with fresh herbs. A glass of white wine is highly recommended.
