
Tatar pie with three fillings
Description
Perfect with tea and coffee. The pie turns out tall and hearty. If the top browns heavily during baking, cover with foil and finish baking. Serve cooled or slightly warm.

Prepare the necessary ingredients.

Dissolve the yeast and sugar in warm milk, and let it sit for 15 minutes in a warm place.

The pre-ferment is ready.

Add the softened butter and stir.

Add 300 grams of flour and then continue adding enough so that the dough becomes elastic and does not stick to the hands. The resulting amount of dough is enough for a pan with a diameter of 18‑20 cm.

The dough is ready. Set it aside, covering it with a towel.

Take care of the fillings. Remove the zest from the lemons and peel them completely. Half of one lemon will be needed for lemon juice.

Squeeze the juice from half a lemon.

Blend the remaining lemons with 3 Tbsp sugar in a blender on pulse mode.

Add starch to the resulting mixture and cook over medium heat until thickened.

Pure prunes process in a blender or grind in a meat grinder. If your prunes are hard, soak them for about 20 minutes in boiling water, then drain the water and pat dry with a paper towel.

Add 3 tbsp lemon juice and blend again.

Proceed in the same way with the dried apricots.

Form the pie. Divide the dough into 4 parts. One part larger and three equal. Roll each part into thin circles.

Roll out most of it and place it in a pan with sides (diameter 18–20 cm).

Spread the lemon filling on top. On the lemon filling place the second dough circle, then the apricot filling, then another dough circle. Pierce with a fork. Preheat the oven to 80°C and bake the pie for 30 minutes.

While the pie is baking, make a sand crumb. Grind the nuts in a coffee grinder. Mix flour, butter, sugar and nuts, rub into crumbs. After the time has elapsed, remove the pie, sprinkle the top with crumbs. Preheat the oven to 190 degrees and let it bake for another 30 minutes.
