
Beet Tartlets
Description
Perfect for the table and with drinks. If you prefer beet tartlets with a garlic flavor, prepare the filling in advance and keep it in the refrigerator, filling the shortcrust pastry shells only when serving, so they don't get soggy! The dish is perfect even for vegetarian meals. Serve with greens and sauce.

Prepare the listed ingredients. Boil the beets in advance for 30 minutes and let cool. Peel, rinse, and drain.

Grate the boiled beets on a fine grater into a deep bowl. Add mayonnaise of any fat content, or thick sour cream, or yogurt of any fat content. If desired, at this point you can press peeled garlic cloves into the filling or add various spices and seasonings.

Add salt and ground black pepper, gently mix everything until the sauce is tinted with beet juice and the mixture becomes one uniform color.

Carefully fill the tartlets with the beet mixture. For a holiday table, buy shortcrust tartlets rather than waffle ones — they soften more slowly.

Arrange the walnut kernels on the beet mixture to garnish the dish. Place the prepared tartlets on lettuce or parsley leaves and serve.
