
Tartlets with Cream Cheese
Description
The recipe won't take much time. You can make cream cheese tartlets at home with absolutely any filling. Fresh fruits, as well as jam or preserves, work wonderfully. This is a light and elegant dessert that will perfectly complement a festive table. They can be served warm or chilled.

1. Combine the egg yolks with the sugar and salt. Add sifted flour, butter cut into small pieces, and a little cream. Beat the dough until smooth and uniform.

2. Form a ball from the prepared dough and wrap it in plastic wrap. Refrigerate for at least 1 hour. If desired, for the cream cheese tartlet recipe, you can also use pre-baked or even store-bought tartlet shells.

3. Remove the dough from the refrigerator and cut it into 6-8 pieces (depending on the size of the molds).

4. Roll out on a floured surface fairly thinly, then place in the mold. Carefully trim the edges.

6. Cover each tartlet with a small piece of foil (or parchment), then fill with heavy grains or dried beans. Dried peas work perfectly for this and can be reused many times.

7. Place the tartlets in a preheated oven and bake for 10 minutes. Then carefully remove the weights and brush them with egg yolk beaten with water. Return the baking sheet to the oven for another 5 minutes. Meanwhile, you can beat cream cheese with sugar and vanilla. 8. Cool the finished tartlet shells thoroughly and fill them with cream cheese.

9. Carefully spread the cheese evenly, and if desired, return the tartlets to the oven for another 10–12 minutes. Homemade cream cheese tartlets can be served with pieces of fruit or fruit purée, for example, or simply garnished with a slice of lemon and a mint leaf.
