
Tartlets with Herring

Perfect for the table and drinks. The classic recipe for herring tartlets is a slice of fish in a pastry basket. However, you can make a much more original version that will definitely surprise everyone lucky enough to try this appetizer. Can be served warm or chilled.

1. First, start with the base for the tartlets. These won't be ordinary pastry baskets — they'll be made from potatoes. First, wash the potatoes, peel them, and cut them into medium-sized pieces. Cover with water and boil until tender.

2. When the potatoes are cooked, drain the water and mash them thoroughly until you have smooth, lump-free mashed potatoes. Add a little butter and warm milk if desired. This herring tartlet recipe also works with store-bought pastry cups, or you can make them from lavash, for example.

3. Spread the finished puree into muffin tins, distributing it in a thin layer over the entire surface. Place in a preheated oven and bake at medium temperature until they turn light brown.

4. Now you can proceed to preparing the filling. Clean the herring by removing the skin and bones. Cut the fillets into small cubes.

5. Thoroughly mash the cottage cheese until there are no lumps (you can pass it through a sieve) and add a small amount of sour cream to make the mixture softer.

6. These herring tartlets made at home are a complete surprise. Another very unpredictable ingredient is the pickled cucumber. It should be diced into cubes.

7. Now combine all the ingredients and mix thoroughly. If needed, add a pinch of salt or pepper to taste.
