
Tartlets with Filling
Description
The appetizer is quick and easy to prepare. If you like salted or smoked fish, you can add it to the filling made from boiled beets. For vegetarians, offer tartlets with cheese and vegetables, and for a brighter, more colorful look, use red or black caviar—or perhaps a mix of both. Garnish the tartlets with leaf lettuce, parsley, dill, etc. Serve the appetizer at the table.

Prepare the listed ingredients. Purchase shortcrust tartlet shells, boil the beets in advance and cool them in ice water. Carrots or chicken eggs can be used instead of beets.

Peel the boiled beet, rinse it in water, and grate it on a fine grater into a deep bowl. Let it sit for 2–3 minutes and drain the released juice; otherwise the mixture will be too moist and will soak the tartlet shells.

Add mayonnaise of any fat content, or replace it with garlic mayonnaise or garlic sauce. If desired, you can sprinkle in a little ground dried garlic.

Fill two thirds of the tartlet shells with processed cheese, or replace it with Philadelphia cheese.

Rinse the cherry tomatoes and cut them in half, slice the pitted olives into rounds, and cut the "Mozzarella" balls in half as well. Arrange the sliced tomatoes, cheese, and olives together on 3–5 tartlets. Fill the remaining empty tartlets with a heaping mound of beet mixture. On the remaining tartlets with processed cheese, top with red or black caviar.

Garnish the dish with olives, fresh herbs, lettuce leaves, etc. You can place a slice of lightly salted or smoked herring or mackerel on the beet mixture. Adjust to your own taste and the tastes of your family and guests.

Serve the colorful tartlets with filling to the table immediately after preparation, before they absorb the juices from the ingredients. Don't forget to fill a glass with sparkling champagne or wine. Enjoy your meal!
