
Tartlets with chanterelles

Prepare the ingredients.

First, peel the potatoes and set them to boil. Place flour, baking powder, salt, and chilled butter cut into cubes in the blender bowl; process until crumbly.

Mix the egg with 2 tablespoons ice-cold water.

Pour the egg mixture into the butter-flour crumb mixture.

Knead the dough, roll it into a ball, and refrigerate for at least 30 minutes.

Prepare the baking molds, grease them with butter, and dust lightly with flour. I used molds with a diameter of 12 cm.

Finely chop the bacon and fry it with half an onion.

Remove the fried bacon with onion from the pan, add the onion and sliced chanterelles, add about 20 grams of butter. Sauté.

Add 2 tablespoons of sour cream to the chanterelles and simmer for another 5–10 minutes.

Prepare mashed potatoes from boiled potatoes, add sautéed onion and bacon.

Divide the dough into 6 portions, roll each portion into a flatbread; it's best to do this through plastic wrap.

Place the dough in the molds, prick the bottoms with a fork, and blind-bake the tartlets for about 10 minutes at 180–200°C.

Place the potatoes as the first layer.

Place the chanterelles on the potatoes.

Grate the cheese on a grater.

Sprinkle the tartlets with cheese.

Bake the tartlet shells in the oven for 25-30 minutes at 180-200°C.

Remove the tartlets from the molds and serve them garnished with greens. They are good both hot and cold.
