Step 1

Potatoes: Peel, wash, and grate on a coarse grater. Then squeeze out the potato juice; it will only get in the way of our dish.

Break 1 egg into the bowl with the potatoes and add cheese grated on a coarse grater. Season with salt and spices, and mix thoroughly. I usually use only ground black pepper, as it goes with any filling, but you can choose spices that pair especially well with your filling.

Now spoon the potato mixture into the molds. Don't make the layer too thick; if you leave small holes, you'll get beautiful lacy tartlets.

Bake the tartlet shells in an oven preheated to 180°C for half an hour. Wait until they have cooled, then remove them from the molds. You can now fill them with any filling you like. This time I simply topped them with Olivier salad, but it had the desired effect. So feel free to experiment, and to everyone.
