
Plum tarte Tatin
Description
Homemade baking for tea. For anyone who thinks French cuisine is always impossibly complicated and made from obscure ingredients, this recipe is sure to surprise them. A French plum tarte Tatin is an incredibly simple tart that takes only 4 ingredients and just 50 minutes to make, 35 of which the tart spends in the oven. In practice, it’s a quick pie, yet the tart tastes genuinely good. In short, this recipe deserves a place in your own lineup of go-to recipes :)

Take a bowl and sift the flour into it.

Take the butter out of the refrigerator and cut it into cubes.

Rub the flour and butter together until crumbly. You can do this with a knife, your fingers, or a blender—whichever you prefer.

Add ice-cold water (about 100 ml) to the butter-flour crumble mixture and start kneading the dough.

Shape the dough into a ball like this.

Roll out the dough to a thickness of about 0.5 cm. In the original tart recipe, the dough should be refrigerated for half an hour, but once when I was in a hurry I skipped this step—and I didn’t notice any substantial difference.

Now we make the filling. Melt the butter in a pan, add the sugar, and heat until the sugar turns golden.

Pour the caramel into the bottom of the tin you’ll use to bake the tart. Arrange the plums halved and pitted in the caramel.

Cover the plums with a sheet of dough, tuck the edges inward into the dish. Place in the oven and bake for 35–40 minutes at 190°C.

Let the finished tart cool slightly, then cut into slices and serve.
