Peel the apples, remove the cores, and cut them in half.

Put sugar into a saucepan and place over medium heat. Cook to make caramel; the sugar should melt and acquire a pleasant color. The most important thing is not to burn the caramel. At the end, sprinkle with cinnamon (scraped with a knife).
