
Tart with Asparagus
Description

Step 1

1. Preheat the oven to 220 degrees. Spray a 25 cm skillet with cooking spray and set aside. In a large bowl combine flour, leavening agent, salt, and pepper. Add the cubed butter and, using a pastry cutter or two knives, mix until the mixture resembles crumbs. Add ice‑cold water and stir.

2. On a lightly floured surface, roll the dough with a rolling pin to a diameter of 36 cm. Place it in the pan, press the bottom and sides against the pan surface, trim the excess. Bake for 15 minutes, until golden. Set aside.

3. In another 25 cm skillet, bring water to a depth of 2.5 cm to a boil. Add the asparagus and cook for 5 minutes. Remove the asparagus from the skillet, rinse it, and let it cool slightly. When the asparagus has cooled, cut it into pieces 12 cm long. Set aside.

4. Prepare the filling by whisking eggs, milk, sour cream, lemon juice, lemon zest, and salt.

5. Arrange the asparagus on top of the tart crust, imitating the spokes of a bicycle wheel (see photo). Carefully pour the egg mixture over the asparagus. Sprinkle grated Parmesan cheese and basil leaves on top. Bake for 20–25 minutes. Let it stand before serving.
