
Tart with cherry tomatoes
Description
Home baking with tea. A cherry tomato and goat cheese tart is a pie that is very colourful in appearance and flavour. I mastered this recipe a long time ago—fortunately it is very simple and quick, exactly what home baking calls for. In principle you can make such a tart for everyday tea gatherings or for festive occasions—the dish is quite pretty and striking. Note that it is very important to use only ripe tomatoes, otherwise the pie will look sad. Ordinary tomatoes may be used instead of cherry tomatoes, but again it will not be as pretty. Good luck making it. Serve cooled or slightly warm.

First, dice the butter.

Take a bowl and sift the flour into it. Add butter and salt to the same bowl. Work the mixture until it resembles coarse crumbs. Then add rum and a little ice-cold water. Knead the dough.

You should get dough like this. Gather it into a ball.

Roll out the dough and place it in a shallow baking dish. Refrigerate for about 30 minutes.

Wash the cherry tomatoes and slice them into thin rounds.

Take the pastry out of the refrigerator and dock it all over with a fork. Lay a sheet of parchment paper on top and spread dry beans on the paper as weights. Bake in an oven preheated to 180° for 10–12 minutes.

Take the pan out of the oven; remove the paper and beans. Lay the sliced tomatoes on the dough in overlapping rows and sprinkle lightly with salt.

Sprinkle with grated cheese and spices, and bake in the oven for another 15 minutes.
