
Chanterelle tart
Description
The recipe won't take much time. Chanterelle tart is extremely delicious! Actually, it's very simple to prepare and can be made even easier than in my recipe. For example, if you don't want to bother with making dough, you can easily use store-bought puff pastry (large sheets). You can prepare the sauce and filling separately, and whenever you feel like having a pie, just assemble them together. You can replace béchamel with another sauce, but when it comes to dishes with chanterelles, I prefer delicate combinations, so béchamel is perfect. I highly recommend trying this chanterelle tart—you won't regret it ;)

Step 1

First, you'll need to prepare the dough. It's quite simple. In the bowl of a food processor, combine 1 teaspoon of salt, sugar, and flour, then add cold butter cut into pieces. Pulse until the mixture resembles fine crumbs (the dough should look like small peas). Add ice-cold water. Pulse again, then knead by hand, wrap in plastic wrap, and refrigerate for about an hour. Meanwhile, thoroughly rinse the mushrooms in a colander. Use a toothbrush if necessary.

Prepare the filling. Place a skillet over medium heat and pour in the olive oil. Add the onion, sliced into half-rings, then almost immediately add the sliced mushrooms and thyme leaves. Sauté for 10 minutes, stirring constantly. Season with salt and pepper. Set the prepared filling aside.

To make béchamel sauce, we need: melt butter in a saucepan over medium heat, add flour and whisk until the butter and flour are completely combined. Cook the mixture over medium heat for about 3 minutes, stirring constantly. In a separate container, heat the milk, but do not boil! Pour the warm milk into the first mixture and stir (or even whisk). The mixture will quickly begin to thicken over low heat. Reduce the heat to minimum and gently whisk until the sauce thickens completely and turns into a smooth, homogeneous mass. Mix in the grated cheese, season with salt and pepper to taste. Remove from heat and let cool.

Take the dough out of the refrigerator, divide it into several parts and roll out into flatbreads. Place the filling and sauce in the center.

Neatly fold the edges of the dough into pleats, leaving the filling exposed. Transfer the tart to a greased baking sheet, sprinkle with a small amount of grated cheese, and place a sprig of thyme on top.

Place the chanterelle tart in a preheated oven at 200 degrees and bake for about 20–25 minutes. Once baked, remove it from the oven, let it cool slightly, and serve.
