
Tart with blueberries, lavender and ryazhenka cream
Description
The recipe won't take much time. For the cream I used frozen ryazhenka. Of course, you should prepare such a cream in advance. It can be substituted with whipped cream. The scent of lavender beautifully adorns this tart, highlighting the flavor of fresh blueberries. Be sure to add a pinch, you won't regret it. It can be served with tea or coffee.

Step 1

For the cream, freeze a bag of ryazhenka overnight. Then line a colander with two layers of cheesecloth and place the frozen ryazhenka from the bag onto the cheesecloth. Let it thaw and drain. In the end, a delicate fatty mass will remain in the cheesecloth. Mix it with powdered sugar, stir, and beat with a mixer. Store in the refrigerator until use.

Cut the cold butter into cubes and place it in the blender jar. Add the sifted flour with leavening agent and cocoa powder. Also a pinch of salt and a little dried lavender crushed between your palms, pulse until crumbly.

Add the egg and knead until it begins to come together into a ball.

Place the dough in a baking dish, forming high sides. Chill it in the freezer for about 10 minutes.

Line the dough with parchment paper or foil and sprinkle beans or peas on top.

Bake in a preheated 200 °C oven for about 20 minutes. Then remove the beans (they can be reused; just let them cool and set them aside for later), remove the paper and continue baking the dough until done. Cool the finished base on a rack.

In hot, rich cream, add broken dark chocolate and stir well until dissolved. I added dough crumbs to the ganache, smoothing the edges of the base. Let it cool a little and pour onto the base.

Place the washed and well‑dried blueberries on top. If desired, sprinkle a pinch of lavender over them.

Pipe the ryazhenka cream beautifully from a pastry bag fitted with a star tip.

Garnish the tart with berries and mint leaves, dust with powdered sugar, and serve with a cup of tea.
