Description

It goes perfectly with tea and coffee. Remember that after baking, the cottage cheese tart with apricots must be chilled in a cold place or in the refrigerator for at least 1–2 hours. It is served cold at the table with fragrant tea, coffee, latte, cappuccino, and so on. Serve it cooled or slightly warm.

    First, prepare the shortcrust pastry. Crack a chicken egg into a deep bowl, add sugar, salt, and vanilla. Beat for about 2–3 minutes.

    Pour in neutral vegetable oil or clarified butter and mix.

    Add the wheat flour without baking powder and knead a firm shortcrust dough. Refrigerate for 20 minutes.

    Place the sour cream and cottage cheese of any fat content into another deep bowl, add a chicken egg, and sprinkle in the sugar. Beat everything thoroughly with a fork or a whisk — this is the filling.

    Take the dough out of the refrigerator and spread it by hand into the pan, forming raised edges. The layer should preferably be thin so that the filling bakes through. Pour the cottage cheese filling onto the dough and spread it evenly. Rinse the apricots in water, cut them in half and remove the pits. Place the apricot halves into the filling.

    Place the pan in the oven at 180 degrees and bake the pie for about 35–40 minutes on the middle rack. The cooking time will depend on the width of the pan and the power of your appliance.

    Be sure to chill the apricot tart for 1–2 hours after taking it out of the oven. The cottage cheese filling will set and thicken, making it easier to remove. Cut it into serving pieces and bring it to the table.
