
Taralli
Description
The recipe won't take much time. Making taralli is very simple; even the most inexperienced housewife can manage it. The filling can be a wide variety of combinations of aromatic herbs, olives, and other ingredients. It can be served with tea or coffee.

Prepare the ingredients.

In a mixing bowl, combine white dry wine, olive oil, salt, and dried herbs.

Cut the sun‑dried tomatoes as finely as possible.

Add the tomatoes to the main ingredients.

Add the sifted flour.

Knead the dough, knead for at least 10 minutes, the dough becomes soft, very pleasant, and incredibly aromatic. Let the dough “rest” in a bag for 30 minutes in the refrigerator.

Roll the dough into sausages about 8 cm long and no more than 1 cm thick. You can use a dough cutter as a template.

Pinch the ends of the “sausage” together into a ring. While you’re making the taralli, heat a wide pot of water. Take about 10 pieces at a time and drop them into salted water; as soon as they float, lift them out with a slotted spoon.

Pat the taralli dry on a cloth napkin so the dough doesn’t stick to your hands.

Place the taralli on a baking sheet, bake at 180‑200 °C for 30‑35 minutes, the taralli should be well baked inside; if they remain moist inside, they will become too hard as they dry out.

Taralli turn out aromatic and very tasty. They should be firm yet crumbly, the whole flavor of this wonderful delicacy unfolds already in the mouth, you feel all the richness of flavors, the olive oil is wonderfully noticeable, aromatic herbs, sun‑dried tomatoes add their own note.
