Description
Homemade pastry for tea. Using a tandoor in this recipe will make the samsa authentic. However, if you don't have access to one, simply place the samsa on a baking sheet and bake in a preheated oven at the final step. Trust us, it will turn out incredibly delicious no matter what. Serve warm or cooled. Perfect with tea.

1. Start by kneading the dough. Sift the flour through a fine sieve onto a work surface, add the melted fat and about half of the water, making a small well in the center. Begin kneading the dough, adding more water as needed. Knead vigorously, applying pressure, for no less than 15 minutes.

2. Then cut into small strips, and then into cubes. Each piece should be thoroughly mashed by hand, then folded from the edges toward the center to form a small patty.

3. Now, on a floured surface, you can roll out the dough quite thinly.

4. Whether or not you use a tandoor for this simple recipe, samsa can have any filling you like. In this case, it's the traditional version with meat, spices, and onion. Place a generous amount of filling in the center, then gather the edges and pinch them tightly together.
