Tamarind sauce

Description
Perfectly complements meat, poultry, and side dishes. Tamarind belongs to the legume family. However, in this recipe, it can be substituted with tkemali plums or cherry plums. The sauce turns out sweet and slightly spicy. It goes well with meat (especially lamb) as well as rice dishes. Tamarind is most commonly used in Indian and Thai cuisines. Serve chilled or at room temperature.

Remove pits from the dates and tamarind. Soak the ingredients in water for 20 minutes.

Blend the tamarind, ginger, cumin, date, pepper, and water with a blender until a paste forms. Transfer it to a frying pan.

Simmer the sauce over low heat for 5 minutes, stirring constantly. The sauce is ready!
