Tagliatelle Bolognese
Description
The recipe won't take much time. Tagliatelle and Bolognese sauce is a classic combination of traditional Italian pasta and traditional sauce. This pairing is considered the most authentic. You can buy ready-made pasta from the store or make it yourself by following the step-by-step recipe. Serve hot.
Instructions
- 1
Step 1

Prepare the ingredients.
- 2
Step 2

To make tagliatelle, mix egg, 1 tablespoon of olive oil, a pinch of salt, and wheat flour (high-gluten flour and semolina).
- 3
Step 3

Knead the dough.
- 4
Step 4

Roll out the dough as thin as possible.
- 5
Step 5

Lightly sprinkle the rolled-out dough with semolina (you can substitute it with coarse wheat semolina), then roll it up into a log.
- 6
Step 6

Cut the dough into strips 0.8 cm wide, which is the proper width for tagliatelle.
- 7
Step 7

Toss the tagliatelle strips, coil them into "nests," and let them dry while you prepare the Bolognese sauce.
- 8
Step 8

To prepare the sauce, finely chop the onion.
- 9
Step 9

Finely chop the celery stalks.
- 10
Step 10

Finely chop the carrots.
- 11
Step 11

Pour olive oil into a frying pan, heat it, sauté the onion, celery, and carrots, then add the tomatoes.
- 12
Step 12

Add the meat mince to the frying pan, cover with a lid, and simmer until cooked through.
- 13
Step 13

Finely chop the basil. If fresh basil is not available, you can substitute it with dried basil.
- 14
Step 14

Add basil to the sauce and season with salt to taste. At the same time, start boiling water for cooking the tagliatelle. Cook the tagliatelle for no more than 2-3 minutes after the water comes to a boil, as fresh pasta cooks almost instantly and should not be overcooked.
- 15
Step 15

Before serving, sprinkle the tagliatelle with grated Parmesan and garnish with a basil leaf.
