Step 1

1. In a large resealable plastic bag, mix vegetable oil, vinegar, lime juice, salt, cumin, chili powder, and crushed garlic. Add the meat, seal the bag, and shake thoroughly so the beef is evenly coated with the marinade. Refrigerate for at least 4 hours or overnight. Preheat the oven with a rack in the center to 175 degrees. Pour the marinade into a baking dish; it should be large enough to hold all the meat in a single layer. Place the meat in the dish, cover with aluminum foil, and bake for about 2 hours until the meat is very tender. Shred the cooked beef using two forks.

2. Reduce the oven temperature to 120°C. Heat the vegetable oil in a skillet over medium heat. Fry the flatbreads one at a time. First, lower the flatbread into the oil, then fold it in half using tongs, but keep it partially open. Flip after about 1 minute. Fry for 1 minute on the other side until the flatbread becomes slightly crispy. Repeat with the remaining flatbreads. Place the finished flatbreads in the warmed oven to keep them warm.
