
Lentil Tacos
Description
Lentils are very filling and nutritious, so an ordinary appetizer made with them becomes a hearty dish rich in protein and fiber. Serve with herbs and sauce.

1. In a saucepan, heat the olive oil over medium heat. Add the finely chopped onion and cook, stirring occasionally, until it begins to brown at the edges, about 8 minutes. Add the minced garlic and spices. Cook until fragrant, stirring constantly, about 1 minute. Add the lentils, salt, and broth, cover with a lid, and simmer for 25–30 minutes, until the lentils are tender.

2. Remove the lid and cook over low heat for 6–8 minutes until the mixture thickens. Using a potato masher or a wooden spoon, mash some of the lentils. Stir in the chopped cilantro.

3. While the lentils are cooking, preheat the oven to 135 degrees. Place a kitchen towel dampened with water on a baking sheet. Arrange the flatbreads on the towel in a single layer (slight overlap is acceptable), then cover with a second damp towel. Heat in the oven for 10 minutes until the flatbreads are warm and soft.

4. Evenly divide the filling among the flatbreads and serve immediately.
