Taiwanese pork buns

Description

Tasty baked goods for the whole family. Don't be scared off by the large number of ingredients and the long description. It's all quite simple! Pork for gua bao is prepared in various ways. I always make a larger amount of meat; the spicy aromatic brisket or pork belly are delicious even on a slice of black bread with mustard! I will offer you my version of preparing the meat, and you can cook it your own way, adding your favorite spices. The baking is ready. Serve at the table.

    Start with the meat. Rinse and thoroughly scrape the skin. Place it in the multicooker and cover with hot water up to the level of the meat. Add 150 ml of soy sauce, 1 tablespoon of sugar, an onion separated into petals. Also add celery stalks, 4–5 slices of fresh ginger, peppercorns, cloves, 2–3 garlic cloves, a star anise. Cook the meat on low heat (no more than 90 °C) for 2 hours.

    Slice the meat into sufficiently thick slices.

    Fry in a small amount of oil until golden brown, in batches. Transfer to a plate.

    Drain off excess fat and add to the pan the spices listed in the ingredients, soy and oyster sauces, and sugar. Add 0.5 cup of spicy broth from cooking the meat. Bring to a boil and add the fried meat. Simmer over low heat until the liquid is almost completely evaporated. The meat should become very tender, the skin delicate.

    While everything is boiling or simmering, knead a yeast dough from the listed ingredients: flour, warm water, salt, sugar, yeast, and vegetable oil.

    Let the dough rise, then divide it into small pieces about the size of a medium egg. Shape them into balls and let the dough rise again.

    Roll each ball into a thick oval flatbread. Brush with sesame oil and fold in half. Don’t seal the edges—just roll it up.

    Place the buns on squares of baking paper in the steamer. Steam for 10–15 minutes.

    Prepare the salad. Slice the fresh cucumber very thinly. Add onions – both green and regular, parsley or cilantro greens, garlic. Salt and pepper to taste, sprinkle with a pinch of sugar, add vinegar – rice or apple. Mix well and let it sit in a cool place.

    All that's left is to assemble our Gua Bao Pin. Carefully split the hot bun, spread your favorite sauce – some use mayo with wasabi, others hoisin sauce. Place a couple of pork pieces, then a spoonful of salad on top. Generously sprinkle crushed peanuts and green onions. Enjoy!
