
Thai banana pancakes
Description
Perfect for serving with tea and coffee. When making Thai pancakes, special attention should be paid to the dough. It is prepared differently than we are used to. First, mix all the dough ingredients and knead well. Wrap in plastic wrap and let rest for an hour. Then, with hands greased with vegetable oil, divide the dough into portions, cover again with plastic wrap, and let rest for another half hour. Next, stretch each portion of dough by hand into a large thin pancake. Place it on a skillet greased with butter. Put the banana and egg filling in the center of the pancake, then quickly fold in the edges. Fry on one side, then flip to the other. Once cooked, cut the pancake into squares and drizzle with condensed milk.

Mix the cream, water, egg, flour, and a pinch of salt. Knead the dough.

Wrap the well-kneaded dough in plastic wrap and let it rest for an hour.

Then wet your hands with vegetable oil and divide the dough into small equal portions. Cover them with plastic wrap and let rest for another half hour.

Then, using your hands, stretch each piece of dough into a thin flatbread. Your hand movements should go from the center toward the edges.

For the pancake filling, lightly beat one egg and chop the bananas into it.

Grease a preheated skillet with butter and place the pancake on it. While it is frying, quickly place the filling in the center of the pancake and fold the edges over to form a parcel.
