Description

The recipe won’t take much time. Given the variety of fillings for chudu, any gourmet can pick a filling to suit their taste: cottage cheese, greens, meat, egg, rice, and all kinds of combinations. Unleavened dough holds the juicy filling inside well and doesn’t go soggy. The main thing is not to overbake the Dagestani pie in the oven, or you risk drying it out. The bake is ready. Serve it at the table.

    To make chudu, prepare the ingredients. For plain dough you will need only water, flour, and salt. For the filling, use ground meat, potatoes, salt, ground black pepper, and onion.

    First, sift the flour through a sieve into a bowl of a suitable size. In the center, make a well by pushing the flour toward the edges of the bowl. Dissolve half the salt in warm water and pour it into the well in the flour.

    Start mixing the dough with a fork, gently working the flour from the edges of the well into the liquid until all the flour is moistened.

    Continue kneading the dough on the work surface. The dough should be fairly dense and elastic. Shape it into a ball, place it in a bowl, cover with a kitchen towel or plastic wrap, and set aside so the dough can rest.

    For the filling, prepare ground meat. Cut the potatoes into julienne strips. Cut the onion into half-moons.

    From the given quantity of ingredients you get 4 large chudu, 29–30 cm in diameter. Divide the dough into four parts of about 380 g each. Then divide each part into two unequal portions. Unleavened dough dries out very quickly, so it is best to cover it with plastic wrap or a towel.

    Roll out a slightly larger portion of dough into a sheet as thin as you can. Lay the rolled-out sheet into a flour-dusted pan. It is very handy to roll the dough out on a silicone baking mat, assemble the chudu on it, and bake it on the same mat.

    Divide the filling into four parts, place a portion of the minced meat on top of the first layer of dough and spread it in a thin layer over the entire perimeter.

    Roll out the remaining dough into a smaller circle and place it on top of the filling. Press the bottom and top layers of dough together to seal them. In the center of the chudu, make a hole for the steam to escape. Sprinkle the chudu with water.

    Preheat the oven to 200 degrees. Bake the chudu for 10–15 minutes until golden brown. After baking, brush the chudu while it is still hot with butter. The bake is ready!
