Homemade baked goods for tea. In the cuisine of any people there are always a few dishes that define its national character. Russian pancakes and pies, Ukrainian varenyky and borscht, Belarusian draniki and many other dishes. In Udmurt cuisine there are also dishes that are equally loved by everyone. These include perepechi, zhuko milym, taban. Taban is an Udmurt festive bread dish in the form of a flatbread made from sour dough. These sour flatbreads are baked from all types of flour. The name “taban” comes from the Udmurt word “taba” – “frying pan”, because it is baked on it. I want to introduce you to the recipe and tell you, it can be served with tea or coffee.

Prepare the ingredients.

Add dry yeast, sugar, vegetable oil, and a pinch of salt to warm water. Stir.

Gradually add the sifted flour, stirring constantly. Cover the dough with plastic wrap, and let it ferment in the kitchen for 2–3 hours. The dough will turn into a liquid sour cream.

During fermentation, mix the dough several times.

Pour the batter onto a very hot pan, about 3‑4 mm thick. Then fry it on both sides.

Butter each taban with a small piece of butter.

Prepare zyrat. Beat the egg. Add flour and milk to the beaten egg. Beat, then heat and bring to a thickening, stirring constantly.

Add butter and a pinch of salt to the ready zyr. Stir and let cool.

Dip the hot taban in zyret and try.
