Description

You can serve these profiteroles as a snack or use them as tartlets, for example. They can be filled with salad, caviar, or cream cheese. The most important thing is to follow the main rule for choux pastry: do not open the oven during baking. Otherwise, you shouldn't encounter any problems.

    1. In a small saucepan, combine the butter and water. Place over heat and bring to a boil.

    2. Add the sifted flour and a pinch of salt. Scald, stirring thoroughly. Remove from heat and let cool slightly.

    4. Grate the cheese. Set aside a handful, and add the rest to the dough.
