
Cheese Sticks from Sharp Cheese
Description
A delicious appetizer for any gathering. This cheese snack goes well with both tea and beer.

1. Preheat the oven to 175 degrees. Grate the cheese. Soften the butter and cut it into 4 pieces. In a food processor, mix the cheese, butter, flour, salt, and red pepper flakes until the mixture resembles coarse crumbs. Add the milk mixed half and half with cream and mix for 10 seconds. On a lightly floured surface, roll out the dough into a 20 x 25 cm rectangle about 3 mm thick.

2. Using a sharp knife or pizza wheel, cut the dough into thin strips 20 cm long and 6–8 mm wide. Dip the knife in flour—this ensures a clean cut. Arrange the cut strips on a baking sheet lined with parchment paper, spacing them 6 mm apart.

3. Bake the cheese sticks in the oven on the middle rack for 12 to 15 minutes, until the ends are lightly browned. Then remove from the oven and place on a cooling rack.

4. Serve the cheese sticks at room temperature. Store cheese sticks in the refrigerator in a covered container for up to two days.
