
Cheese gnocchi
Description
The recipe won't take much time. Gnocchi is a dish with a centuries-old history. It was a meal for the poor, so the list of ingredients is very simple. They resemble our dumplings or lazy vareniki, but it's a bit more complex. Authentic cheese gnocchi are made from choux pastry, so you'll need to put in a little effort. Every Italian housewife knows this. Serve hot.

Place butter (125 g) and water into a saucepan. Cook until the butter has completely melted.

When the water with butter comes to a boil, add the flour and stir vigorously to form a smooth dough.

When the dough has completely absorbed the moisture, remove it from the heat and add the eggs one at a time, incorporating them into the dough using a spatula.

Grate the cheese and add 50 g to the dough. Stir the still warm dough until the cheese is absorbed. Let the dough cool.

Melt the butter (75 g) in a frying pan, add the flour (70 g) and fry until golden.

Pour in the milk, add salt and pepper, and stir in nutmeg. Cook the sauce, stirring constantly, until thickened.

Place the dough into a piping bag. Gradually squeeze it out to form small dumplings. If you don't want to bother, shape the gnocchi by hand.

Drop the gnocchi into boiling salted water and cook for 6-8 minutes.

Place a few spoons of "Béchamel" sauce on the bottom of the baking dish.

Place the boiled gnocchi in an even layer on top.

Pour sauce over again, sprinkle with cheese (100 g), and drizzle with melted butter (50 g).

Cover the dish with foil, then place it in the oven preheated to 150 degrees for 15 minutes. Then remove the foil and switch to grill mode for a couple of minutes to form a nice crust.
