
Cheese Chips in a Waffle Maker

1. First, melt the butter and let it cool to room temperature.

2. Grate the cheese on a fine grater

3. Mix part of the flour with the baking powder and add the cheese. Add a little seasoning to the mixture: one third teaspoon of basil and the same amount of cumin.

4. Thoroughly mix everything together, adding flour as needed. The end result should be dough like this (see the picture). Visually it looks very much like choux pastry, as for éclairs.

5. When the dough is ready, move on to the creative part: rolling the balls. Each ball should be about the size of a walnut. You should end up with about 70 pieces.

6. The balls are ready. Preheat the waffle iron and grease both sides with vegetable oil (once is enough; there’s no need to grease before each batch). Depending on the size of the waffle iron, you can cook 2–3 chips at a time.
