
Cheese cookies with basil

1. Mix the flour, salt, and baking powder. Pour nut oil (or any other vegetable oil) into a bowl, add the flour, and rub into fine crumbs. Grate the Parmesan on a fine grater and mix it with the flour crumbs.

2. Rinse the basil under cold running water and dry with a paper towel. Remove the leaves from the stems and chop. Wash and dry the lemon, then grate the zest.

3. Roll out the dough on a floured cutting board. The dough should be about seven millimeters thick. Cut out cookies using a cookie cutter (you should get about twenty pieces). Preheat the oven to 180 degrees. Line the baking sheet with parchment paper (if you don't have parchment paper, dust it with flour).

4. Place the sliced cookies on a baking sheet. Bake the cookies in the oven for about twenty to twenty-five minutes on the middle rack. To brown the cookies, move the baking sheet to the upper rack at the very end of baking.
