
Classic cottage cheese pancakes
Description
Perfect with tea and coffee. If you can't find homemade cottage cheese, store-bought will work too. Serve the finished pancakes warm or cold. This is a great option for breakfast or afternoon snack (especially for children). You can add raisins, dried apricots, or nuts, as well as vanilla or cinnamon. Serve the pancakes with sour cream, jam, honey, or fresh berries. Serve warm or chilled. Ideal with tea.

Place the cottage cheese in a bowl and mash it with a fork or a hand mixer.

Beat 2 chicken eggs into a bowl with the cottage cheese, add 0.5 cup of flour and granulated sugar (you can increase the amount to taste).

Mash the contents of the bowl with a fork or mixer until there are no large lumps.

Pinch off a small piece of the cottage cheese dough and shape it into a ball, roll it in a small amount of flour, then press down and shape it into a cheese pancake.

Heat a skillet with sunflower oil and place the cheese pancakes on it. Fry for about 3 minutes on each side.
