Traditional cheese pancakes
Description
This recipe won't take much time. 1. Using a fork or a mixer, beat the cottage cheese, eggs, a pinch of salt and sugar, vanilla (if desired), semolina, and starch until smooth. 2. With wet hands, shape small balls (no larger than a tablespoon). Slightly flatten them in your palms. Fry in vegetable oil until golden brown. Use a wide spatula, and the pancakes will flip easily. One more tip—oil must be well heated before you add the first batch of pancakes. 3. At this point, you can stop—your pancakes are ready. Serve 2–3 per portion with a spoonful of sour cream. Delicious! 4. However, some housewives go a step further: they place the pancakes into a pot, dilute sour cream with water until it becomes liquid, pour it over the pancakes, and simmer over low heat for 5–7 minutes. Try both versions—either way, they'll be delicious. The dish is ready. Serve at once.
