Cottage cheese pancakes with condensed cocoa
Description
Many people love cottage cheese pancakes (syrniki). This dish is very easy and quick to prepare. To make syrniki tasty, healthy, cheesy, and tender, be careful not to add too much flour. It's better to use baking powder instead of baking soda in syrniki.

Step 1

1. Pass the cottage cheese through a meat grinder or strain it through a sieve. Then add the beaten egg, vanilla, and a pinch of salt. Mix thoroughly until the mixture becomes smooth and uniform. If desired, you can make the pancakes sweet by adding some sugar.

Step 2

2. Sift the flour through a sieve, add a little baking powder to it (refer to the instructions on the package), and then knead a very soft, sticky dough.

Step 3

3. Wet your hands in cold water (to prevent the dough from sticking), and shape small cheese balls. Coat them in finely ground breadcrumbs or flour.

Step 4

4. Pour vegetable oil into a frying pan, heat the pan until a slight smoke appears, then fry the cheese pancakes over low heat until they develop a golden-brown crust. Be sure to carefully regulate the heat, as cooking on high heat may leave the inside of the pancakes undercooked. Once the cheese pancakes are ready, let them cool slightly, then drizzle with chocolate or condensed cocoa.
