Cottage Cheese Pancakes with Apple Without Flour
Description
Choose cottage cheese for syrniki that is fresh, dense, and not watery. If the cottage cheese still contains a lot of liquid, place it in a sieve lined with a paper towel and a single layer of cheesecloth, and let it sit until it reaches the desired consistency. Semolina can be replaced with quick-cooking flakes or oat flour. The apple should not be too juicy, or squeeze it after grating.

Step 1

Prepare all the necessary ingredients for making flourless cottage cheese pancakes with apple. Wash and dry the apple.
- 2
Step 2

Place the cottage cheese in a bowl and crack in the egg.

Step 4

Cut the apple in half, grate it on a coarse grater, and add it to the bowl with the cottage cheese mixture. Mix everything well.
- 5
Step 5

Let the mixture stand for 10–15 minutes so the semolina can swell, absorbing the liquid.

Step 6

Using a tablespoon, place the mixture in the crushed bran and form syrniki.

Step 7

Pour vegetable oil into a frying pan and heat it over medium heat. Place the syrniki in the pan, reduce the heat to low, and fry them for about 4–5 minutes on each side. Transfer the syrniki to a paper towel to remove excess oil.
