Syrniki with cheese and herbs

Description

Homemade baked goods for tea. Serve these colourful savoury cheese pancakes with herbs and Suluguni cheese with sour cream or garlic sauce. They are easy to pack for a picnic, a road trip, or a get-together with friends. They are as simple to make as regular cheese pancakes. Serve warm or chilled. Perfect with tea.

    Prepare the listed ingredients. You may use cottage cheese of any fat content; a drier rather than wet consistency is best.

    Place cottage cheese of any fat content into a deep container and mash it with a fork. Grate the cheese on a fine grater straight into the container with the cottage cheese.

    Wash the green onions and dill, chop finely. Add to the bowl together with the salt. Crack in the chicken egg. If there will be a lot of cottage cheese mixture, use two chicken eggs. The main thing is not to make the mixture too runny!

    Add 2 tbsp wheat flour and mix gently.

    Wet your hands with water and divide the dough into equal parts. Roll each of them in your hands into the shape of a cutlet and bread them in the remaining flour on all sides.

    Heat vegetable oil in a frying pan and arrange the shaped syrniki in it. Lower the heat to medium and fry the syrniki on one side for about 2–3 minutes.

    Carefully flip to the other side and fry for another 2–3 minutes.

    Arrange the golden-brown cheese pancakes with cheese and herbs on a plate and serve them hot.
