
Syrniki with Baking Soda

If you have a large family, be sure to increase the amount of ingredients and bake a little more dessert so there’s enough for everyone and some left over for seconds! By the way, the cheese pancakes can be frozen and then quickly reheated in the microwave if you don’t have free time.

Prepare the listed ingredients. Cottage cheese of any fat content can be used, especially sour, the acidity will be exactly neutralized by the added baking soda.

In a deep bowl, place the cottage cheese, add granulated sugar, salt, and pour in a chicken egg. It can be replaced with three quail eggs.

Mix everything thoroughly, add the baking soda and half of the premium wheat flour. Mix thoroughly again. If desired, you can use corn, rice, or coconut flour instead of wheat flour.

Pour the second half of the flour onto a plate or shallow dish. Moisten your hands with water, shape a small cottage cheese cake piece from part of the dough, and roll it in flour on all sides.

Heat vegetable or butter in a pan, add the cheesecake portion to it. Prepare the other portions in the same way, add them to the oil and fry on one side for about 1‑2 minutes.

Carefully flip the cheese pancakes to the other side and fry for the same amount of time over medium heat.
