
Syrniki with arugula
Description
They pair perfectly with tea and coffee. Golden cottage cheese patties with arugula are easy to take to work, on a trip, or on a picnic—don’t forget various sauces, dips, pâtés, and the like. They taste good both warm and cold. The main thing is to choose quark that isn’t too wet, so the patties hold their shape well while frying. Serve cooled or lightly warm.

Prepare the listed ingredients. It is best to use cottage cheese that is not too moist, so the syrniki do not spread on the pan while frying.

Place the cottage cheese in a deep bowl. Wash the arugula leaves and trim off the stems. Cut the greens into ribbons and add them to the bowl with the cottage cheese.

Beat the chicken egg and add salt. Mix everything thoroughly with a fork, lightly mashing it.

Add 2–3 tbsp of wheat flour while kneading the cottage cheese dough. It should not be too thick, but it should not be runny either. The important part is that the dough keeps its shape and is easy to shape.

Spread the remaining wheat flour on a plate and divide the dough into 5–6 portions. Wet your hands with water, shape small patties, and coat them with flour on all sides.

Heat a little oil in a frying pan and add the prepared pieces. Fry for 2 minutes per side over medium heat until golden brown on the crust.
