Description
Baking is prepared simply and quickly. The most “correct” cottage cheese is a uniform mass without lumps or granules, with a fat content of 4 % to 9 %. The higher the fat content, the more moist the cheese will be and the worse your dough will turn out. If you only have this type of product, spread it on cheesecloth a few hours before preparation. Hang it and let the whey drain. It can be served with tea or coffee.

For making cottage cheese pancakes with semolina, we need to take cottage cheese. I use a paste‑like cottage cheese with 5% fat. If your cottage cheese is grainy, pass it through a fine sieve. Place the cottage cheese itself in a bowl and mash it with a fork.

Add eggs, sugar, and flavoring to the cottage cheese. Mix well.

Add semolina and melted butter to the dough. Knead the dough.

With wet hands, shape the cheese pancakes from the dough. Heat a skillet. Add a little vegetable oil, fry the cheese pancakes in the skillet on both sides until golden.

Serve the golden‑brown cheese pancakes at the table. My child has chosen this dish as the favorite weekend dish, and our blessed breakfast always begins with the phrase “Mom, will there be cheese pancakes with milk?” He/she eats these cheese pancakes, washing them down with milk.
