
Cottage Cheese Pancakes by Yuliya Vysotskaya

The recipe won't take much time. I found this recipe in a magazine, and I absolutely loved it. The cheese pancakes turn out tender, yet with a golden and appetizing crust. If you want to make cheese pancakes the way Yulia Vysotskaya does, you'll need low-fat cottage cheese (although this is more of a recommendation than a requirement). I've even made them with quite fatty, homemade cottage cheese, and they turned out simply delicious.

Mash the cottage cheese with a fork.

Add a pinch of salt to the cottage cheese, as well as sugar, then lemon juice and egg. Mix everything thoroughly.

Then sift the flour into the cottage cheese; you can skip sifting, but the resulting cheese pancakes will be dense rather than tender.

Knead the dough and shape it into balls.

Then fry the cheese pancakes on a preheated pan (but set the heat to low), adding a little vegetable oil. The pancakes should not float in oil, but they also shouldn't burn without it. Fry until done, judging by the golden-brown color.

You can also dry the ready-made syrniki by Julia Vysotskaya in the oven (at 180 degrees for up to 10 minutes). But I prefer them simply fried.

You can serve it with sour cream, jam, berries, or honey.
