
Syrniki with rye flour
Description
It pairs perfectly with tea and coffee. If you avoid sugar, replace it with stevia or another substitute. You can omit the sweetener from the ingredients altogether and serve the syrniki with honey or maple syrup.

Prepare the ingredients.

In a deep bowl, beat two small eggs, add sugar, vanilla sugar, and a pinch of salt. Whisk until smooth. If the egg is large, one is enough, but then reduce the amount of flour.

Squeeze out all the whey from the cottage cheese, transfer it to a bowl, and mash with a fork until there are no lumps.

Add the flour gradually, mixing with a fork. The amount depends on how moist your cottage cheese is.

Check the consistency of the cottage cheese mixture — it should be moderately thick. Set the bowl aside and let it rest for about 10 minutes before baking.

Lightly dampen your hands with water, scoop the mixture with a tablespoon, and shape the patties to the desired shape and size. Cook the cottage cheese patties in a frying pan with a minimal amount of vegetable oil for about 3 minutes on each side over medium heat.
