Syrniki from Nadugi

Description

The baked treats are prepared simply and quickly. Georgian nadugi cheese can be bought in large supermarkets or at farm shops and markets. Nadugi is an exceptionally delicate Georgian cream-and-quark cheese made from whey left after sulguni is produced. This cheese may be crumbly like mine or come as a soft block. The cheese pancakes turn out very tasty, tender, and firm. You can stir a little fresh or dried chopped mint or other greens into the curd mixture. The cheese pancakes can also be made in a sweet style. Serve them cooled or lightly warm.

    Prepare all the necessary ingredients. Instead of rice flour, you can use wheat flour or semolina. My version is unsweetened cheesecakes, but you can also make them sweet by adding a little sugar to the cheese mixture.

    Place the Nadugi cheese in a suitable bowl, add salt, crack in a chicken egg, and mix well.

    Add rice (or other) flour and mix thoroughly.

    Divide the resulting mixture into 6–8 portions and shape the syrniki, dusting the board with the reserved flour.

    Place the prepared pieces on a hot skillet with vegetable oil and fry for 2–3 minutes on each side over medium heat.

    Place the cooked cheese pancakes on a paper towel to remove excess oil.

    Serve the syrniki hot with sour cream.
