
Cottage cheese pancakes made with semolina instead of cottage cheese

Pour milk into a saucepan, bring to a boil, and add semolina. Then cook the porridge. It should be very thick, so that a spoon can stand upright in the semolina.

Allow the semolina to cool so that it sets. Add the egg to the bowl with the porridge. Gently stir until the mixture becomes uniform. Do not use a mixer, otherwise the mixture will become too runny.

Now add all the spices to the mixture. Mix everything thoroughly. There is no need to add salt, as the dish will contain enough salty cheese.

Grate the Adyghe cheese and Parmesan on a fine grater. Grate any other hard cheese, for example, Russian cheese, on a coarse grater. Add the prepared cheeses to the main mixture. Mix everything thoroughly once again.

In a skillet, heat odorless sunflower oil. Take the cheese mixture with a spoon and roll it in breadcrumbs, forming small patties. Fry the cheese pancakes over medium heat on both sides until golden brown crust forms.
